Crumbled-up Beyond Burger in a slightly sweet and tangy stir-fry

thawed Beyond Burger patties
Crumble the beyond burger into chunks roughly 1 inch squared.
If you, like me, forgot to thaw your Beyond Burger patties, do not fret! Since we’re crumbling the patties and don’t have to worry about structure, it isn’t too hard to thaw them in a satisfactory manner. Simply microwave for around a minute, poke holes through the patty spaced ~1 inch apart, and then continue microwaving in 30 second increments until you see little or no frost. Make sure to pour off any liquid sweated out by the patties before proceeding.

Heat a large saucepan or wok over a medium-high flame, and add oil.

garlic powder1 tsp
ginger powder1/2 tsp
chili powder1/2 tsp
cayenne pepper
Add the crumbled-up Beyond Burger to the pan, and season with garlic powder, ginger powder, chili powder, and cayenne pepper. Stir fry until the beyond meat is mostly solid.

aji mirin
Add mirin to the pan and continue stirring until it evaporates off
1 cup
frozen mixed stir fry veggies (broccoli, carrots, snap peas, etc.)
Add the veggies into the pan and stir fry until mostly thawed.
1/4 cup
soy sauce2 tbsp
rice vinegar
Add in soy sauce and rice vinegar, slightly lower heat, and cook for another 3-5 minutes.
Serve over white rice.
